AI gender recognition - assured product quality, sustainability and a contribution to animal welfare
AI gender recognition is a fully integrated assistance system for automatically determining the gender of pigs in real time. With an accuracy rate of 99.95%, AI gender recognition significantly reduces the workload for employees. The autonomous system detects indications of abnormalities so that the employees’ expertise can be deployed in a targeted manner. In combination with the module AI slaughter number recognition, AI gender recognition provides a cost-effective, reliable 1-to-1 assignment of genders to specific animals.
The assistance system for gender recognition supports sustainable meat production by reliably identifying the gender not only of fattening pigs, but also of sows and boars. It also contributes to animal welfare. With the help of the testicle classification included in the system, the effect of non-surgical castration and the corresponding boar risk are evaluated non-invasively. The farmer receives feedback on the effect of vaccine-based castration. Instead of random sampling, targeted tests for potential boar risk are carried out on selected, conspicuous male carcasses on the slaughter line. Boar risk is not only relevant to animal welfare; boar meat has a significant impact on the quality of the product.

Pilot project: AI assistance system for beef carcass classification - Objective. Reliable. Efficient.
The AI assistance system for beef carcass classification was developed to safeguard manual assessment processes, relieve the workload on specialists and improve the objectivity of carcass classification es more objective. The AI beef carcass classification provides image-based analyses of meat and fat classes and will be integrated into a digital application for classification. The pilot AI system is currently running in an Austrian cattle slaughterhouse and evaluates approximately 6,000 beef carcasses per month. Data from the system has been and is continuously used for training and testing.
In the near future, the system will ensure greater safety, traceability and efficiency. The system is currently being validated in consultation with the authorities.

Animal Welfare & Visual Inspection
Foodfair offers several AI systems that contribute to improved animal protection and thus ensure increased animal welfare. The pilot system AI-Animal Welfare recognizes several animal welfare characteristics simultaneously directly on the conveyor belt. The included AI modules for tail recognition, ear recongition, skin recognition, gender recognition and official identification recognition detect animal welfare-relevant characteristics automatically, objectively and in real time.
Foodfair also offers an AI-supported assistance system that consists of several modules for organ assessment on the slaughter line. Consistent and objective organ assessment is a major contribution to improving animal welfare. Moreover, these assistance systems relieve the burden on inspection specialists and provide support for an objective and complete assessment of the liver, heart, lungs, pleura, and peritoneum, among other regions and organs of the carcass.

🟢 AI Organ Inspection:
Detects abnormalities in organs such as the liver, lungs, or heart using AI-based visual assessment. → Supports quality control, provides insight into animal health, and aids carcass classification.
The AI assistance system for organ inspection consists of several modules that can be used individually or in combination. With several synchronized cameras, real-time detection of abnormalities and pathological changes, and full integration of the results on the production line, the AI-OrganInspection system offers strong support for inspection specialists. Currently, the system is being prepared for government approval; a thorough and reliable validation procedure is being designed with the largest district veterinary office in Germany. It will be tested in the near future.
🟢 AI Tail Recognition:
AI tail recognition provides classification of tail length and detects partial losses and pathological changes such as necroses – in both docked and curly tails.
🟢 AI Ear Recognition:
AI ear recognition recognizes the presence of left and right ears. Moreover, partial losses and the corresponding probable cause (slaughter processing artifact or healed necrosis) are recognized, as are pathological changes such as cauliflower ear.
🟢 AI Skin Recognition:
AI Skin Recognition identifies conspicuous skin features of various origins, such as pathological changes, large-area bite marks caused by dominance fights, and mishandling caused by humans.
🟢 AI Gender Recognition:
AI gender recognition determines the gender of each carcass – whether it is a fattening pig, sow, or boar. Furthermore, a contribution is made to animal welfare – with the help of the testicle classification included in the system, the effect of non-surgical castration and the associated boar risk is evaluated non-invasively. The farmer receives feedback on the effect of vaccination-based castration.
🟢 AI Tattoo Recognition :
The official identification code that identifies the farm where the pig was raised is usually tattooed onto each pig up to two times by the farmer or transport company prior to transport to the slaughterhouse.
The AI tattoo module recognizes the tattoos and evaluates their quality. For example, the system assesses whether the tattooing was carried out with or without ink. Also, the amount and positions of the tattoos are also recognized to indicate conspicuous markings. In this way, the AI tattoo module supports animal welfare goals. The abbreviations and identifying numbers are entered into company and QA databases in real time. The system thus ensures seamless traceability and supports the animal welfare characteristic of securing the traceable identity of each animal.

The AI based product recognition assistant currently brings precision and efficiency to meat sorting processes. The solution automatically recognizes meat products using a camera and assigns them to the appropriate product category in real time. This replaces or supports manual, error-prone allocation with an objective, standardized process. The system can also be adapted for other product types such as fruit or vegetables.

AI slaughter number- & AI tattoo recognition - Intelligent identification. Seamless traceability.
Animal welfare, production efficiency and quality assurance are the focus in modern meat production. Whether in combination or as stand-alone implementations, the AI modules for recognizing and reading the slaughter processing number and identifying tattoo automatically recognize and entered the information into ERP and QA systems in real time. This ensures complete traceability and official identification.
The AI slaughter number recognition module can be used for both whole carcasses and carcass halves. Currently, 4 to 8-digit slaughter processing numbers are recognized with an accuracy of more than 98.5%. The system not only works with chronological slaughter numbers but also with unsorted slaughter numbers.
The AI tattoo module automatically detects and reads the identification tattoo on each pork carcass and evaluates its quality; for example, the system recognizes whether the animal was tattooed with or without ink. The number of tattoos on the carcass are counted and their positions are also detected to indicate conspicuous markings. These features secure the identity of each animal and support the detection of animal protection and welfare characteristics.
AI slaughter number recognition can be implemented as a stand-alone module and/or in combination with any relevant AI modules along the production line, thus offering flexible tracking of carcasses throughout the production process – animal and carcass data is precisely recorded, reliably linked, and securely documented.
AI slaughter number recognition is highly accurate and presents an inexpensive alternative to RFID. The AI module can be implemented quickly and with little effort, requiring minimal changes to infrastructure.
