The Nogent *** factory was founded in 1923 by Mr Louis André a skilled French craftsman in the Champagne Village of Biesles. An area steeped in history where the tradition of manufacturing knives has been carried out since the middle ages.

The factory sources the best quality raw materials such as bevelled steel, with a high percentage of carbon and molybdenum. Our production methods are honed by years of experience. For instance all our blades are hand ground.

The knives from Nogent *** have the great advantage of benefitting from the world exclusive Affidenté® technology, developed and refined by Nogent *** over many years. The secret of this technology is the micro-serration which requires no sharpening - with 4 tiny teeth per mm of blade, the serration is almost invisible to the naked eye and delivers superior slicing with a high level of control. Each blade is manufactured from high quality, carbon molybdenum stainless steel which is tempered to produce a very high level of hardness. After a first sharpening operation, achieved with an automated machine, each knife is ground by hand on both sides of the blade on a grindstone. A second additional operation is carried out to obtain the Affidenté® serration exclusive to Nogent ***.The knives are incredibly sharp, enabling the user to cut and slice effortlessly and safely. They are also very comfortable to use as there is no sense of the serration when cutting.
