Our company

The DUE ANCORE brand dates back to 1911, from the splitting of a family owned forgery operating since the end of the 1800 for the production of tools for agriculture and farming.

From that family tradition, the experience of forging cutlery was passed on for four generations, leading to the birth and the growth of a big company after WWI and until the ‘50s. The Coltellerie Marcello Beltrame separated from this company in 1953 to specialize and perfection the production of professional cutlery. Traditional production which has always been a part of the cutlery shop, diversified into the manufacture of articles for the construction and farming industries, and professional cutlery in particular for meat preparation. Today the company produces two lines of cutlery: professional and kitchen knives and accessories.

The Professional Cutlery line is the traditional production. For over a hundred years the company produces articles destined to the restaurant, bakery, and butchering businesses. The products are continuously improved thanks to the desire for innovation and towards client satisfaction.

2009 saw the birth of the Knives & Beyond line.  This line is geared towards the high-end user and includes a range of every day-use products which are hand crafted using precious materials. The goal is to put our experience in making professional knives at our clients’ service in an elegant Italian style for everyday use in the kitchen. The careful selection of top quality materials, combined with state-of-the-art design and production, aims to introduce the best Italian lifestyle to our clients home.

Over a hundred years of experience and a high level of quality have contributed to help us become a niche brand for clients in various global markets.  In fact, 80% of our production is exported. Moreover, in 2009 we embarked on an ambitious marketing campaign to support our participation at biggest trade shows (Frankfurt, Dubai, Houston, Milan, Shanghai and others as well) to help Italian quality and experience in cutlery-making being appreciated worldwide.
 

Our spectrum of services

Professional Knives
The professional range is the traditional product line of the Coltellerie Marcello Beltrame.  For over 100 years the company has been producing items for the restaurant, bakery and butchering industries. The experience in this sector guarantees that the quality of our products is always up to clients expectations and open to improvement and innovation to keep up with changing needs and conditions. In particular, the area of  butchering has seen various innovations occur as it relates to ergonomics, safety and the hygiene of cleavers. 
The range includes 0.4 to 3.5-kg cleavers, knives for butchering, knives and spatulas for kitchens and bakeries, cheese knives. In addition, we also have special items like carving forks and deboning knives.
All products are made using first-rate materials which are certified: high-carbon content, molybdenum/vanadium stainless steel provides high corrosion resistance, optimum cutting-edge hold and excellent cutting quality. The handles are made out PP (polypropylene) or POM (polyoxymethylene), materials with high levels of resistance to blows and temperatures.
Our products are easy to sterilize, dishwasher safe, and comply with all the regulations in force as it relates to contact with food.

Today, thanks to new cutting technologies we’re also able to customize products according to client specifications.

Knives & Beyond Line

The Knives & Beyond series is a new line of top-quality products intended for the high-end user. The careful selection of the materials, combined with state-of-the-art design and production, aims to introduce the best Italian lifestyle to our clients home.
The range includes table and kitchen knives, cheese-tasting sets, manicure and shaving sets, as well as cigar cutters and pocket knives. These objects are not only aimed at knife collectors, but find their perfect setting at cigar clubs, restaurants, wine bars and luxury hotels, where they are used for wine and cheese tasting, cigar cutting, or elegant display. The line includes chef’s knives, paring knives, santoku knives, bread knives, a set of carving knives and a set of steak knives

All the products are hand crafted utilizing materials of the highest technical quality. Kitchen and table cutlery, as well as other accessories, are forged and made out of X50CrMoV15 stainless steel, a material which ensures optimum cutting-edge hold and excellent cutting quality. The handles are made of natural materials, such as fine wood, and buffalo horn. Some products are also made of damascened steel: this particular type of finish has various steel layers with various levels of carbon obtained by hammering two different steel bars. The resulting piece is a gorgeous and intricate motif that enhances the beauty of the edge.
